I just became a vegetarian two weeks ago and my mom never makes vegetarian-only meals except for pasta, so basically I have been eating steamed vegetables for dinner every night. We never eat beans or tofu, and the vegetables are usually low nutrition like red peppers and cauliflower. I’m 16 so i’m going to the store today to see if I can buy some easy and nutritious vegetarian meals. Any ideas? I’m tired of eating burrito’s and stir-frys.

Welcome to the vegetarian/ vegan club.
I was in the same situation when I became a vegetarian. My parents didn’t know what to do, and no one was willing to help. I ate toast and spaghetti and salads forever. I was vegetarian for a long time then tried vegan foods.
Luckily, you have many options at your fingertips.
Check out your local library for vegetarian and vegan cookbooks. Or, see if your library can borrow it from another library system for you.
Purchase some cookbooks online. Check out www.Amazon.com and use their option to preview a book online to see what recipes are there. When I started as a vegetarian, I didn’t know what most of the ingredients were so I skipped out on many cookbooks. There are some better ones out there these days.
I am considering buying PETA’s Vegan College Cookbook: 275 Easy, Cheap, and Delicious Recipes to Keep You Vegan at School. It is cheap on Amazon.com and looks basic but I haven’t been able to lookk through it myself yet.
Also, if you contact animal rights groups at their websites like www.PETA.org, some will send you out a free vegetarian starter kit with recipes.

Using vegetables or some vegetarian/ vegan products, these are some common foods to try to make:
Veggie pizza, soups, tacos, spaghetti, pastas, potato salad, lasagna, sloppy joes, pancakes, poor man’s chocolate cake (simply wonderful and vegan), cereals and rice/ soy milk, mashed potatoes, hash browns, french fries, veggie burgers/ bacon/ chicken/ meats, Tofu Supreme sour cream (use with onion soup to make a fantastic dip), curried rice and veggies, vegetarian cookies, toast with veg. margarine, popcorn, chips and salsa, vegan vanilla yogurt that you add bananas and strawberries or some fruit to, baked squash, zucchini or banana bread with egg replacer, plain fruits (grapefruit, apples, oranges, etc.)

Do a search for vegetarian or vegan recipes for whatever your past favorites were. There will be an option for it that you can now eat. You won’t have to feel deprived, and you will help your family expand their options.
